Baked salmon with tomato sauce and tasty veggies
Hey!
I have the feeling that since we’ve been on vacation we either didn’t find time to cook or we’re plainly lazy to cook.
Some days ago we didn’t know what to eat and we didn’t want to go to a restaurant or spend money on fast food. So we went to the supermarket to buy some groceries. We bought stuff like potatoes, lemon, spinach, salmon and so on. Just Everyday stuff you know?
At home, we then prepared the baked salmon with tomato sauce topped with potatoes and so much spinach as a side dish. It was really tasty that is why I want to share with you the recipe!
What you’ll need for 2
400g potatoes (hard)
250g salmon
250g spinach
100g fresh champignons
1x garlic
seasoning: salt, pepper, 1/2 curry powder
Tomato sauce for the Salmon
2 tablespoons tomato puree/fresh tomatoes
1/2 teaspoon olive oil
1/2 teaspoon balsamic dressing
1 teaspoon water
1 teaspoon thyme
a bit of salt & pepper to taste!

First of all, wash an peel the potatoes. Let them cook (15 mins) until they’re soft.
After that turn the oven to 200 Celsius. Rub some oil on the salmon and then put the tomato sauce on the fish. Now let it stay for 15 min in the oven.
Now to the spinach: Fry the garlic and the champignons in a bit of olive oil. When the garlic turns translucent pour the spinach in and season it with the remained ingredients.
Then shred some lemon zest on the baked salmon if you want.
