The Best Vegetarian Jollof Rice ever!

Jollof Rice

Hey!

A week ago I cooked a rice dish that is named Jollof Rice. I showed a little of the process on my instagram story. Jollof rice is made with tomatoes, paprika, spices and ingredients. It’s mostly consumed in Nigeria, Ghana, Gambia and Senegal.

And here is a vegetarian/vegan vision of my own way of making healthy Nigerian Jollof Rice. I kept the ingredients minimalistic and very tasty!

What you’ll need for the Jollof Rice Recipe (for 4 people)

2x tomatoes
1x bell pepper
1/2 habanero
1 tablespoon tomato puree
1x charlotte onion
3x garlic cloves
5x sliced spring onions
thumb size ginger
1 teaspoon of oil
1 tablespoon Thyme
1x veggie cube (Knorr)
2x bay leaves
tablespoon curry powder
3 cups of parboiled rice
3 cups of water
salt/pepper to taste!

First of all blend the tomatoes, bell peppers, habanero, onions and garlic. After that pour this puréed goodness into a pot of oil and add concentrated tomato puree into the mix. Fry and stir everything until you get a thick aromatic paste. This process will take you almost 20 minutes.

Now it’s time to add the remaining spices to the puree. After that, throw in the washed parboiled rice. Mix everything thoroughly.  Pour enough water to the red rice mix. It’s important that the water is on the same level as the rice so that the rice won’t stick to the pot.

Lastly, close the pot and cook the rice till it’s soft on very low heat for 15 minutes. Enjoy..!
